This recipe, I usually only done in portions of bread, it becomes a bread as the size of a muffin around and I used to bake in the microwave so this page is about that. (Nowadays I bake in the oven, better bread, better taste)
If you make bread in size round crumpets then it's better fermented than when baking in a baking tin.
The dough is a bit difficult to handle so to get into a smooth cake, I use a chopped plastic bag that I squeeze the dough into when it is in a round mold. Then, I remove the plastic when baking. It goes quite smoothly and it is not so messy.
The cream can be exchanged for cream cheese or sour cream (in Swedish Kvarg or Creme fraiche) but the bread becomes a bit dense, stickier, more like scones.
If you use cream cheese, add 50 ml milk for each 100 ml cream cheese.

This is 1 Swedish dl (100 ml) and here are the equipment you need.
Basic recipe small batch to a round bread that can be divided in two. It is baked in the oven 200 degrees Celcius for 21 minutes. If you bake it at full effect in the microwave, it takes only 3-4 minutes. You can take it out after three minutes and turn it upside down and then bake it for about 30 seconds more.
And as I said to make this bread into small round crumpets will be the very best. You get a bread that contains 80% less carbohydrates than ordinary toast bread or loaf.
1 dl (100 ml) coconut flour
1 dl (100 ml) almond flour
1 dl (100 ml) and 2 tablespoons cream
1 tablespoon, and 0.5 teaspoon of psyllium husk, Fiberhusk
1 teaspoon baking soda, (A Swedish tea spoon measure is bigger than a regular teaspoon)
1/4 milliliter pure stevia if you want a little sweeter taste
Recipe for larger dough
If you want to make one big loaf then just take the ingredients from the basic recipe times 4. So to make a loaf take the following:
4 dl (400 ml) coconut flour
4 dl (400 ml) almond flour
4 dl (400 ml) plus 8 tablespoons cream (it will be a little bit more than 500 ml)
4 tablespoons plus 2 teaspoons of psyllium husk, Fiberhusk
4 teaspoons baking soda (A Swedish tea spoon measure is bigger than a regular teaspoon)
A small pinch pure stevia if you want a little sweeter taste
Mix all dry ingredients in a bowl. Use a stirrer so that the baking powder is mixed well with the rest.
Break the eggs and pour them in the bowl and pour them in the cream.
Beat with the whisk. It requires that you have some strength in your arm. And at the end you must beat the whisk against the edge of the bowl to get the stuck dough loose. An elektronic Household assistant, food processor might be easy but I bake without it.
Use a spatula or spoon to get the dough out of the bowl. Add the chopped plastic bag over a little round shape/mold. (Tip cut the bottom of a yoghurt bucket if you can not find something that fits.)
Add a suitably sized piece of dough in it, fold the bag over and press the dough with your hand until you get a round cake. Then lift of the plastic and place the cake on a plate and run at full power in microwave for 3 minutes. Take it out and turn the cake upside down and run for 30 seconds more. Split it along with into two parts and allow to cool slightly. On with much butter and your favorite toppings and enjoy!
Bake in oven
Proceed as before to get the bun into shape but put the bun on a baking sheet with parchment paper and bake them two and two in the oven at 200 degrees Celcius (392 Farenheit) for 22 minutes. Let cool on a rack. One can have your favourite bread spices in it. Maybe a little cardamom? More sweet? Little honey in the dough? Raisin? Chopped plum?
I you want to bake low carb and avoid carbohydrates then sweet only with stevia if you want the bread a little sweet. For Stevia has zero carbohydrates and zero calories.
